1. Aglio e Olio (Garlic and Oil)

2. Cacio e Pepe

Three ingredients โ€” pasta, pecorino romano, and black pepper. Reserve a cup of starchy pasta water before draining. Toast coarsely ground black pepper in a dry pan, add pasta water, toss in pasta and freshly grated pecorino romano off the heat. The pasta water is the secret to the creamy sauce.

3. Lemon Ricotta Pasta

Combine ricotta, lemon zest, lemon juice, and pasta water in a bowl. Toss with hot pasta and a handful of parmesan. The pasta water creates a light, creamy sauce. Finish with fresh basil and cracked black pepper.

A jar of good quality basil pesto, a handful of pine nuts toasted in a dry pan, cherry tomatoes, and pasta water to loosen the sauce. Toss with pasta, parmesan, and fresh basil. Ready in exactly the time it takes to cook pasta.
