How to Care for Non-Stick Pans: Make Them Last Years Longer
A quality non-stick pan should last years โ but most fail within months due to a handful of avoidable mistakes. These care guidelines apply to all non-stick coatings including PTFE, ceramic, and hard anodised surfaces.
Never Use Metal Utensils
This is the most common cause of premature non-stick failure. Metal spatulas, spoons, whisks, and tongs scratch and score the coating on every use โ creating channels where food sticks and the coating eventually flakes. Use only silicone, wood, or nylon utensils on non-stick surfaces. Keep a dedicated set of non-stick-safe utensils near your pans so you are never tempted to reach for metal in a hurry.
Never Preheat an Empty Pan
Non-stick coatings degrade rapidly when overheated without food or fat in the pan. PTFE begins releasing fumes at 260C โ which an empty pan on high heat can reach within minutes on some hobs. Always add oil or food before turning on the heat, or use low to medium heat settings only. Non-stick pans are not designed for high-heat searing โ use stainless steel or cast iron for that purpose.
Hand Wash Only
Dishwashers are the second leading cause of non-stick pan failure. The high heat, harsh detergents, and aggressive water jets of a dishwasher cycle degrade the coating significantly faster than hand washing. Wash non-stick pans by hand with warm water, mild dish soap, and a soft cloth or sponge. They clean easily โ a non-stick surface that requires scrubbing is already damaged.
Store Correctly
Stacking non-stick pans without protection scratches the coating on every contact. Use pan protectors โ fabric or felt discs placed between stacked pans โ or hang pans individually. The small investment in pan protectors extends the lifespan of quality non-stick pans significantly.
When to Replace
Replace a non-stick pan when the coating shows visible peeling, flaking, or deep scratches. A damaged non-stick surface is both ineffective โ food will stick โ and potentially harmful as coating particles enter food. A quality non-stick pan properly cared for should last 3-5 years in regular use. A budget pan handled correctly will outlast an expensive pan abused with metal utensils and dishwasher cycles.
